Looking for a vegetable delight? Try this Grilled vegetable sandwich recipe which is a delicious way to satisfy your growling stomachs. Grilled bread slices loaded with cheese and veggies like zucchini, sun-dried tomatoes and lettuce, this snack recipe is to die for breakfast .

  • Step 1

    Cut the capsicums into small pieces. Mix the lime juice, olive oil, oregano, cumin powder, red chilli powder and black pepper powder in a bowl.

  • Step 2

    Heat little oil in a pan over medium flame. Fry the onions and zucchini (if you are using cucumber, just fry the onions) for a minute.

  • Step 3

    Spread butter on half of the bread slices and the lime juice mixture on the other halves. Arrange the lettuce, onions, zucchini, capsicum on the buttered slices.

  • Step 4

    Sprinkle a bit of pepper powder, salt and place a cheese slice on each sandwich. Cover with the other half and place them on a grill pan over medium flame.

  • Step 5

    Grill until cheese melts or for 2 minutes on each side. Remove and cut into 2 triangles. Serve at once.
